With less acidity than red and white wine vinegars, this vinegar has a flavor that is slightly nutty and rich. However, unlike balsamic, it does not take center stage. Sherry vinegar is made from sherry wine, and it may be made from a variety of varietals, including palomino, Pedro Ximénez, and moscatel. Each has a distinct personality, with palomino being the most prevalent and a suitable all-purpose pick (but it is also the least sweet).

Similarly to balsamic vinegar, the longer sherry vinegar is aged, the more time it has to soak up the flavors of the wood and the more concentrated it gets (and the more costly it becomes—but even a young sherry vinegar has a lot of flavor).
